P-Nut Butter and Oatmeal

This is my favorite cookie recipe given to me by my cousin Cheryl.
Yummy!

Ingredients:
1 cup peanut butter
1 cup buttor or margarine, softened
1 cup white sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
2 cups rolled oats
1 1/4 cup flour
1 tsp baking soda

Method:
Cream butter and eggs.  Add vanilla and mix well.  In separate bowl, mix dry ingredients (rolled oats, flour and baking soda).  Add to butter and egg mixture.  Mix well.  Spoon onto cookie sheets and bake at 350°F pre-heated oven for 10-12 minutes.  Yield 5 dozen cookies.

Variation:
Once mixed, if desired you can divide dough into four batches.  Keep one batch as in the original recipe.  Take a second batch and add 1/2 cup coconut.  Take the third batch and add 1/2 cup chocolate chips.  With the fourth batch, add 1/4 cup chocolate chips, 1/4 cup chopped walnuts and 1/4 cup coconut.

Oatcakes

A traditional recipe carried over from Scottish settlers to
Nova Scotia in Atlantic Canada.

Ingredients:
3 cups old fashioned rolled oats
3 cups all-purpose flour
1 cup sugar (white or brown)
2 tsp salt
1 tsp baking soda
1 1/2 cups shortening
2/3 cup cold water (approximately)

Method:
Preheat oven to 350°F.
In large bowl, combine oats, flour, sugar, baking soda and salt.  Cut in shortening using hands or pastry blender.  Slowly add enough water to moisten; stir with knife.  Shape dough into 2 balls.  Chill for 10 minutes.

Pat each ball into a rectangle and roll out until 1/4-inch thick, using oats on the board instead of flour.  Cut into 2-inch squares or circles.  Place on lightly greased baking sheet.  Bake for 15-20 minutes until crisp and golden.  Transfer to a rack and cool.  Yield 2 dozen.

Sugar may be reduced to 1/2 cup if a less sweet cookie is desired.
