    Mom's Tea-cakes

A very old-fashioned recipe I found among my mother's things after she passed away.  I'm not sure where she got the recipe.  I believe it comes from the 1800s.  Note the old-time measurements.  I've tried this recipe using the hardened lard resulting from frying up some salt pork or bacon.  I wonder what Grandma's used to taste like baked in a wood stove oven... sighhhhh....

Ingredients:
2 teacupfuls flour
1 teacupful ground rice
1 1/2 cups moist sugar
2 ounces butter
2 ounces lard or drippings
1 egg
lemon to taste
enough milk to moisten

This recipe had no instructions for baking temperature.  Biscuits usually require a very hot oven, so I set the oven to 425°F and baked them till golden brown.  They came out pretty good I thought.

    Cheese and Garlic Biscuits

These are very similar to the biscuits from the Red Lobster restaurant chain!  My friend Lisa from where I used to work gave me this recipe.  Thanks Lisa!

Ingredients:
2 cups Bisquick Baking Mix
2/3 cup milk
1/2 cup shredded cheddar (I like sharp!)
1/4 cup garlic butter

Method:
Preheat oven to 450°F.
Mix baking mix, milk and cheese until soft dough forms.  Mix vigorously for 30 seconds.  Drop dough by spoonful onto ungreased cookie sheet.  Bake 8-10 minutes or until golden brown.

Melt garlic butter, brush over warm biscuits before removing from cookie sheet.  Serve warm.  Yield 10-12 biscuits.
